Ingredients
2 T olive oil
4 garlic cloves - 2 crushed, 2 minced
1 yellow onion chopped
1 carrot peeled and chopped
2 celery ribs chopped
1 quart organic chicken broth
1 can pizza sauce - 15 oz
1 lb ground sirloin or ground turkey
½ C fresh grated parmesan cheese plus extra for topping
1 16 oz bag frozen chopped spinach or fresh spinach
1 can cannellini beans rinsed & drained
1 egg yolk beaten
A pinch of allspice
Saute onion, carrot, celery in oil in a dutch oven or stockpot for 8–10 minutes, stirring often. Add 2 crushed garlic cloves and saute for 30 seconds, stirring often. Add broth and pizza sauce and cook on high and bring to a boil. Meanwhile in a mixing bowl, combine ground meat with minced garlic, grated cheese, egg yolk, salt and pepper and allspice. Form bite size meatballs (just quickly roll in hands) and drop into boiling soup. When all meatballs have been added and soup returns to a boil, reduce to simmer. Add frozen spinach and cannellini beans and cook 8–10 minutes. Ladle into bowls and top with fresh parmesan cheese. Serves 6.
